One of the most inventive pink drinks in Long Beach can be found at Spanish restaurant Teleferic Barcelona inside 2ND & PCH (6480 E Pacific Coast Hwy). La Flaca is made with Illegal Mezcal, Patrón Silver, spicy liqueur, prickly pear, agave, and lime. However, its spectacular presentation makes the cocktail a full-on experience. Served in an angled coupe glass, the drink is finished with chili salt on the rim and, as a final touch, the server forms a bubble over the glass and traps smoke inside, adding a layer of flavor as well as a dramatic touch.

MADRES BRUNCH

Madres Brunch (442 E 1st St) in Downtown Long Beach is a cute little spot with pink murals and neon signs inside the restaurant and pink drinks and dishes on the menu. The pinkest has to be The Journey, a plate of pink strawberry pancakes served with a dramatic flourish. A bright pink strawberry condensed milk and strawberry crumble topping is added at the table, poured into a ring mold and released like a cake being glazed. Mother’s Kitchen (3382 Orange Ave, Signal Hill) is a cozy breakfast and brunch restaurant that boasts an updated shabby chic decor, with bundles of roses nestled around the lighting fixtures, flower garlands draped elegantly along the walls, and bouquets spilling out of baskets and vases throughout the space. The chairs are pink, the straws are pink, even the tortillas on the tacos are pink. There are both traditional breakfast items and Mexican food on the menu, with dishes named after the owner’s family members.
